Crunchy Chicken Salad
2 baked, grilled or boiled boneless/skinless chicken breasts
3/4 cup mayonnaise
1/2 onion, finely chopped (Red variety adds the most flavor)
2 medium size stalks of celery, finely chopped
4 sweet pickles, finely chopped
Ground pepper to taste
1 teaspoon prepared spicy mustard
2 cups of crisp, Chinese Noodles
4-5 lettuce leaves (your favorite variety will do just fine)
Shred chicken with a fork or chop into very small pieces in a medium mixing bowl. Add remaining ingredients, with the exception of Chinese noodles and lettuce leaves, and still until well blended. Divide lettuce leaves evenly on two serving plates. Add Chinese noodles to chicken mixture and fold in carefully until we distributed. Divide the chicken/noodles mixture between the two serving platters, placing on top of lettuce leaves. When combined with a warm bread and quick fruit of your choice, it's indeed quite a meal for two. (Note - Always add the Chinese noodles just prior to serving in order to enjoy their crispness)

1 teaspoon brown sugar
1/4 cup pickle relish
4-6 servings

Avocado Chicken Salad
Salad:
3 cups cooked, diced chicken
3 cups cooked white rice
2 avocados, peeled, diced, and tossed with 1 tablespoon lemon juice
3/4 cup chopped onion
1 cup mayonnaise
1 to 2 teaspoons pepper
1 teaspoon salt
1/4 cup chopped fresh parsley leaves
Avocado Dressing:
1 large avocado, peeled and mashed with 2 tablespoons lemon juice
1 cup mayonnaise
1/2 cup sour cream
1/2 teaspoon Worcestershire sauce
1/3 cup chopped onion
2 cloves garlic, minced
1 teaspoon salt
Dash cayenne pepper
Thick, crusty bread, multi-grain or sourdough, for serving
Lemon wedges, for garnish
Salad:
Mix all ingredients and chill. Pass with avocado dressing.
Dressing:
Place all ingredients in a food processor and blend until smooth. Chill and serve alongside chicken salad.

I dice up the chicken put it into a bowl. Dice up celery, onion, and put in two tablespoons of pickle relish and a little pepper, salt and paprika. Add salad dressing or mayo and there you have it.

left over or fresh cooked chicken breast about 2. Roasted from a deli works good. Chop or shred it.
mayo, pickle relish(sweet or dill), celery(finely chopped) all of these to taste.
salt & pepper
Mix all together, let sit in frige for a bit to meld the flavors and then spread on some bread.

i usually use left over chicken or canned chicken for this.
miracle whip
1/2 stalk celery
red grapes halved
walnuts
mix all together enjoy
i like it on croissants
sounds terrible but it is the best

1.boil chicken, shred it,
2.hard boil a few eggs and chop them up
3.mix with mayo(miracle whip) and a smidge of mustard, chopped pickles (I prefer sweet), salt and pepper, grapes, onions, celery--you can pick and choose from everything here except the mayo and mustard. They are needed to hold it together.
