Chinese Dipping Sauce
Dipping sauces are an integral part of Chinese cooking. This sauce is simple to make but tastes great when served with stir-fries, or egg rolls or any other Chinese item which uses a dipping sauce.
1 tablespoon light soy sauce
2 shallots, finely chopped
2 tablespoons rice wine vinegar
2 teaspoons sesame oil
1/2 tablespoon superfine sugar
1/2 inch fresh ginger, finely grated
1/2 small red chili, seeded and finely chopped
4 servings

1. Mix together all the sauce ingredients in a bowl and stir well until combined.
2. Cover and chill in the refrigerator, to allow the flavors to infuse, for at least 1 hour prior to serving.

Take a raw hunk of ginger (peeled), a smashed garlic clove and one green onion chopped and place it in a bowl. Pour 1/3- 1/2 cup soy sauce and 2 tbsp rice wine vinegar (optional) over it and microwave for about a minute. Allow this to cool and strain the ginger, garlic and onions out. Slice up a few more green onions to float on top- you want to crunch from the fresh ones rather than reserving the ones you microwaved earlier.
