Go by his interests (fishing? golfing? nascar? boating? gardening?) Make the theme something he really enjoys doing. Have people tell stories of things he has done in the past.
Funny stories like a roast. Hire a belly dancer (not a stripper).
Have his favorite food and do it at his favorite place.
Invite all his friends and his kids and stuff. Play songs from when he was young that he really likes. . Don't forget balloons and cake.

my husband had a 40th birthday party 2 years ago and all his old mates from school dressed up as old men with wigs and walking sticks. They had a right old laugh and the photograghs were great. It was a really good night. Hope that helps

A video of pictures of him through the years is a nice touch.
Of course, my man would love to have a belly dancer perform for his birthday. Shhh...that's what he's getting on his 40th. Still clean enough for the kids to see, but sexy enough for him.

My best friend threw a "Mock" Funeral for her man when he turned 30. We all wore black, and made him wear red and decorated with halloween stuff like Grave Stones, and a skelliton platers. Nice over the hill signs like old as mold. It is great as a surprise party we had a blast!
