Depends on the cooking method. If you fry it whole like most latin styles, the oil should be hot, about 350 to 375. IF you sautee it, a hot skillet with olive oil and butter just below the smoke point. In the over about 350/375 for not more than 10 - 25 minutes. Remember if you are going to sautee it and dont want it to stick, heat the pan first then put in the oil and butter. Simple rule of thumb, hot pan, cold oil, food won't stick. And it doesn't matter what type of pan you use. For any of these methods use whatever seasoning you like best. I happen to like lemon butter with capers and little dry white wine.

I usually cover it with pico de gallo and bake it at 375 degrees for 8-10 minutes, until is becomes firm but does not flake when pressed.

Not sure about the temp. but tilapia cooks quickly, maybe 4 minutes on both sides if you fry it.
