It's not so much that they deny it... they DISMISS it. There are basically two reasons:
1. They believe that God gave man 'dominion' over the earth and all the plants and critters that inhabit it:
Genesis 1:26 "Then God said, 'Let us make man in our image, in our likeness and let them rule over the fish of the sea and the birds of the air, over the livestock, over all the earth and over all the creatures that move along the ground.'"
2. They are not concerned with despoiling the planet, or screwing up the weather... or even increasing the national debt far beyond our ability to pay it back. They don't think that the world will be around long enough to have to worry about paying it back. These bone-headed idiots think that we are at the 'End of Times', and the world will come to an end within the next 50 years... perhaps even within their own lifetimes. They are waiting with great anticipation to be sucked up bodily into heaven, and to meet Jesus, descending from Heaven, in the clouds. By despoiling the earth, they think that they are fulfilling God's will, and they are awaiting the end of the world with great anticipation, when the Lord will get them safely out of the way, and the rest of us 'non-believers' will suffer the vengeful wrath of God.
Even the Iraq war is seen as a 'good' thing... part of the setting-up of the proper conditions for the Battle of Armageddon... the final conflict between good and evil... to take place.
The answer to your question is... to these deluded morons, scientific facts are irrelevant... a distraction. They only thing that they like about science is that it holds the capacity to deliver into their hands, the tools that they need to facilitate bringing our world to its promised end.
Be afraid... be very afraid. These people presently make up over half of the elected and appointed offices in the executive and the legislative branches of the US government.
Where they give the APPEARANCE of denying it, it is because science undermines their ability to lead their gullible minions (sheeple) around by the nose and their POLITICAL power through the guise of bogus RELIGIOUS issues. In that light, it is necessary to maintain the illusion/delusion of religious dogma in order to keep their base of political power intact. To have the sheeple thinking for themselves, gaining actual scientific knowledge, employing critical thought processes to evaluate actual facts, would undermine their whole game. The flock must be kept intact... and the only way that the shepherds can do that is to keep them in the dark... keep them from 'eating from the tree of knowledge'.

A century ago we were told that we were facing global cooling. That we were racing toward an ice age. Now we are being told that we are facing global warming.
Scientists have not conclusively proven "global warming." There are many scientists that are still saying that our climate is cyclical and that temperatures rise and fall.
How haughty and prideful we puny little humans are to think that we can affect our climate and bring it to the verge of destruction. Nature itself produces more "greenhouse gasses" and pollutants than we as humans ever could. Mount Pinatubo released more pollution and greenhouse gasses than all of the cars created and driven in the 1900s.
The earth and its atmosphere are more resilient then environmentalists want to admit, it continually damages itself and repairs itself to a degree far beyond what we can do.
The Bible says God created the universe in 6 days. To say that God needed millions or billions of years implies that He doesn't have the power to speak things into existence as the scriptures state. He created the world and the laws that it operates in...the laws are subject to Him, not the other way around. The scriptures say that He spoke everything into existence and that there was no evolution involved.
As far as viral mutation, it's simple. When God created the world, it was perfect; however, when man sinned against God, it introduced imperfection into the world. Mutations are imperfections on the genetic level...some mutations are harmful and some are beneficial to the being, but they do not change the nature of the being (as evolution would suggest). When viruses multiply, there are mutations in their genetic code...some of these are resistant to medicines...as a result, those viruses survive and are able to multiply passing that mutation on while others that lack that resistance are destroyed and their genetic code is eliminated.

First you have to understand the difference between adaptivity and evolution.
adaptivity is changing part of itself to combat something, but it is basically the same.
evolution is an actual change for instance a cattepilliar changes into a butterfly. But this is not exactly evolution either. Since it has to be that catepilliar before it becomes the butterfly, thus making it a life cycle.
See adaptivity even us humans have. We don't call it evolution do we. Example, years ago a common cold could kill us, today it ussually can not. Another example is people that live in extremely different places. A person that has lived his/her whole life in Hawaii would go up to Alaska even in the Summer time and get very cold. Where as A person from Alaska would go to Hawaii and get extremely hot even in the winter. Thier bodies have adapted to the temprature.
Another example is people like Jeff Corwin. Jeff Corwin can get bitten by a poiseness snake and be just fine, but a person like me could get bitten by the same snake and die almost immediatly. His body has adapted to snake poisen, in other words he has antivenom flowing through his viens.
As for your first point, it's really invalid. No according to most it is not a sin to try to stop global warming. It would be a nice thing to do, but not a sin if you don't. Even the most religious people know that God's time is different then our time.
No, I'm not bashing your beliefs, I'm just showing you another way to look at it.

So what is your question????? Bottom line -- fundamentalists, christian, muslim or whatever, are loathe to accept responsibility for their own future, preferring to pray to something to get them out of jams, then say is is the workings of god....... Those of us based in reality accept our life as about 80 years, and do the very best we can to have a nice life, at the same time give and help others...... (And any thinking human knows that evolution is not fiction, but absolute fact.....)
