My friend just e-mailed me a great recipe..Boil a pot of water, get it to a running boil...While your waiting get out the zip-lock bags and add two eggs and whatever else, like cheese or ham, olives..Then mix it up in the bag seel it and drop into the boiling water for 13 minutes..The perfect omlet comes out of the bag ..I've tried it with a brunch party I had..The omlets really were perfect..

Pizza Omlette Recipe
This recipe from the Ontario Egg Producers is a favorite breakfast or lunch dish
2 eggs
2 tablespoons water
1/2 teaspoon Italian seasoning (optional)
salt & pepper (to taste)
1 teaspoon vegetable oil
2 tablespoons pizza sauce or tomato sauce
1/4 cup sliced pepperoni or sliced mushrooms or diced green peppers (whatever)
1/4 cup shredded mozzarella cheese or cheddar cheese (or blend)
Whisk eggs, water& seasonings in a medium bowl.
Heat oil in an 8 inch non-stick skillet over medium high heat.
Pour egg mixture into skillet.
As mixture begins to set, use a turner to gently push cooked portions toward the center.
Tilt skillet to allow uncooked portions to flow into empty spaces.
When egg is almost cooked but still looks moist, spread sauce over the top.
Sprinkle with toppings& cheese.
TO MELT CHEESE: If the skillet is ovenproof, place under a preheated broiler for 1- 2 minutes (watch closely!) If the skillet is not ovenproof, place lid on skillet& cook for 1- 2 minutes.

Well, I am sure you can make an omlet already. 3 meat omlet with sauted verggies in garlic.
3 meats: Bacon (Small broken pieces), Scrapple and Sausage.
Veggies: Broccoli, asapragus and Onions.
Any cheese but I believe shredded cheddar melts better.
I know this sounds so fattening but it also sounds really good.

ZIPLOC OMELET
(This works great !!! Good for when all your family is together. The best part is that no one has to wait for their special omelet !!!)
Have guests write their name on a quart-size Ziploc freezer bag with permanent marker.
Crack 2 eggs (large or extra-large) into the bag (no more than 2); shake to combine them.
Put out a variety of ingredients such as: cheeses, ham, onion, green pepper, tomato, hash browns, salsa, et cetera.
Each guest adds prepared ingredients of choice to their bag and shake.
Make sure to get the air out of the bag and zip it up. Place the bags into rolling, boiling water for exactly 13 minutes. You can usually cook 6-8 omelets in a large pot. For more, make another pot of boiling water.
Open the bags and the omelet will roll out easily. Be prepared for everyone to be amazed!
Nice to serve with fresh fruit and coffee cake; everyone gets involved in the process and a great conversation piece.

This is a delicious omelet with a little bit of a twist.
Baked Omelet Pie
INGREDIENTS:
1 large baking potato
6 eggs
1 teaspoon salt
1/2 teaspoon ground black pepper
1/4 cup chopped fresh parsley
2 tablespoons olive oil
1 onion, chopped
1/4 cup chopped red bell pepper
1/4 cup chopped fresh mushrooms
1/2 cup chopped ham
1 tomato, sliced
1/4 cup shredded Cheddar cheese

DIRECTIONS:
Bring a medium pot of salted water to a boil. Add potato and cook until tender but still firm, about 15 minutes. Drain, cool, peel and slice.
Preheat oven to 350 degrees F (175 degrees C). Beat together eggs, salt, pepper and parsley.
In a cast iron skillet, heat olive oil over medium-high heat. Saute onion and red pepper until soft, then stir in mushrooms. When mushrooms start to shrink, add the chopped ham, potato and tomato slices. Pour in the egg mixture; gently stir to combine.
Sprinkle cheese on top of eggs and place skillet in preheated oven. Bake until eggs are firm, about 10 to 15 minutes. Allow to cool briefly before serving.

fry interesting mushrooms in butter and sprinkle with fresh herbs or Penzey's Pasta Sprinkle.
Optionally, cut up fresh asparagus in 1 inch pieces and fry with the mushrooms or instead of them
Whisk two eggs with a little milk, pour it on top of the asparagus/mushrooms
then sprinkle with grated cheddar
the add a bit of shaved deli ham
fold and serve the omelet
very good with green side salad:
mixed greeens
craisins
orange segments
feta cheese
kraft poppy seed dressing
maybe some pupernickel croutons

2 eggs
1/4 cup cottage cheese
2 Tbsp diced tomato
1 Tbsp diced onion
Whisk eggs and mix in tomato & onion. Allow to heat in skillet. Add cottage cheese before eggs solidify. Cook through.

Make the eggs up like normal add cheese in the middle then once its on the plate top it with avocado and sour cream. It sounded nasty to me but it is really good.
