this is a basic recipe
CRUST (recipe makes one double crust):
2 1/2 cups white flour
2 tbsp. sugar
1/4 tsp. salt
1/2 cup cold butter, broken into small pieces
5 tbsp. cold vegetable shortening
8 tbsp. ice water
Measure the flour, sugar and salt togetherl. Stir to combine.
Add the chilled butter pieces and shortening to the bowl. Cut them in with a pastry cutter or knife. Don't over mix them.
Add the ice water. Mix until the dough holds together (add a bit more water, if necessary).
Turn the dough onto a lightly floured surface, knead it together, then divide in half.
Flatten each half into a disk, wrap in saran wrap and chill for at least half an hour.
Roll out one of the disks on a lightly floured surface until you have a circle that's about 12 inches in diameter.
Put the circle in a 9" pie plate, trimming any extra dough from the edges with a sharp knife (parents only). Return it to the refrigerator until you are ready to make the pie.
Add filling (see below)
Roll out the second ball of dough and cover top. Use a fork or your fingers to pinch the edges together. cut a couple slits in the top.
FILLING
1/3 to 2/3 cup sugar
1/4 cup all-purpose flour
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
Pinch of salt
8 medium sized apples (a medium apple = about 1 cup)
2 tablespoons margarine
Heat oven to 425 degrees.
Peel, core and slice the apples. Try to keep the size of the slices even.
Mix sugar, flour, nutmeg, cinnamon, and salt in large bowl.
Stir in apples.
Pour into pastry-lined pie plate.
Dot with margarine.
Cover with top crust and seal the edges. Cut slits in the top.
OPTIONAL: Cover edge with 3-inch strip of aluminum foil to prevent too much browning. Remove foil during last 15 minutes of baking.
Bake 40 to 50 minutes or until crust is brown and juice begins to bubble through slits in crust.

Ingredients

3 large Bramley cooking apples, chopped, stewed and cooled

Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Sieve the flour and salt into a bowl.
3. Rub in the margarine or butter until the mixture resembles fine breadcrumbs.
4. Add the cold water to the flour mixture. Using a knife, mix the water into the flour, using your hand to firm up the mixture. The pastry should be of an even colour and suitable consistency for rolling.
5. Divide the pastry into two halves. Take one half and roll it out so that it is big enough to cover an 20cm/8in enamel or aluminium plate. Trim the edges with a knife using the edge of the plate as your guide.
6. Cover the pastry with the stewed apples and sprinkle with sugar to taste.
7. Roll out the other half of the pastry. Moisten the edge of the bottom layer of pastry and place the second piece on top.
8. Press down on the pastry edges, making sure that they are properly sealed. Trim off any excess pastry with a knife in a downward motion, again using the plate as your guide.
9. Flute the edges with a pinching action using your fingers and thumb.
10. Prick the surface of the pastry lightly before placing the pie in the oven. Cook for 20-30 minutes.
11. When the pie is cooked it should move slightly on the plate when gently shaken.
12. Slide on to a serving plate, dust with caster sugar and serve.

Lay Pie dough ( you can buy the pre made sheets on the bottom of a pie dish and fit it to it. - Cut up like 5 apples or whenever it is heaping (use soft apples and a variety...macintosh, cortland, rome, yellow, etc...) put some lemon juice on the apples (not too much) sprinkle sugar and some cinnamon - personal preference and then cover with the other sheet of pie crust. Bake on a low temp like 300 until you can feel the apples are soft inside and crust is browning

This won a contest in Kentucky.
1/3 cup shortening
1/3 cup butter
2 cups flour
1/3 cup boiling water
1/2 teaspoon salt
1/2 teaspoon baking powder
Filling
7 granny smith apples
1 teaspoon cinnamon
1 1/2 tablespoons butter
3/4 cup sugar
Crust: Mix shortening, 1/2 cup butter and flour.
Add boiling water, salt and baking powder.
Mix well.
Separate into 2 balls; place between 2 pieces of wax paper; roll.
Filling: Peel, core and slice apples.
Lightly mix cinnamon and sugar with the apples.
Heap into pastry lined pie pan and dot with 1 1/2 tablespoons butter.
Cover with topping crust; slit to allow steam to escape.
Bake at 425°F for 15 minutes then reduce temperature to 350° and continue baking 45-60 minutes.

1 cup raisins
1 recipe pastry for a 9 inch double crust pie

DIRECTIONS:
Preheat oven 425 degrees F (220 degrees C). Spray deep dish pie plate with cooking spray
Combine white sugar, light brown sugar, flour, lemon, cinnamon, and mix well. Add apples and raisins to sugar mixture; stir until fruit is well coated.
Spoon apple mixture into pie crust. Place second piecrust on top of filling, and trim edges. Lightly glaze top of pie with a beaten egg, then sprinkled with a little sugar.
Bake till golden brown, about 35 to 40 minutes. Place on a wire rack, and cool 30 minutes.
Baking pie is a rather straightforward technique, but a few tips can only help to make your pies come out looking and tasting perfect!

Life's to short. Also on a more serious note, just think of all those little people, think they are the same as umpa lumpas in Charlie and the Chocolate Factory, only they are called pommepa lumpas, who make apple pies for shops and supermarkets who would be out of a job if we all started making our own. Could you honestly live with the guilt?

peel & slice 2/3lbs bramley apples, pre-cook short crust pastry case till just firm, lay sliced apples in rows and cover with lemon juice and sugar. Cover with pastry lid (uncooked), make pastry leaves and place on top, egg wash all over. Make a hole in centre to let steam out, pop into hot oven until brown and bobs your aunt! I think!
