You need to find this out for yourself by trying different wines. I love red wines and am indifferent to most whites, so I usually drink reds with fish even thought that is "against the rules" Host a wine tasting party having every guest bring their favorite(s) and see what you like and don't like (and cook some beef and some fish if you really want to figure out what works with what). Finally, my tastes change at different times, some days I want something really bold sometimes something lighter.

No one can tell you what the best wine for your pallet, that is a choice you mus t make for yourself. Any time you go to your local place serving alcohol, try a different Red or White wine, till you find one you like, of each. But, remember, your company has altered tastes to you, and may not like your choice in Red or White. So, I recommend, that when your having guests for dinner, implore them to bring the wine of their choice, depending on the meal.
That's why in finer restaurants, they let you test the wines before they serve them.

After drinking 3 bottles of Boone's Farm Apple Wine, you are apt to eat anything on the table. A plate of worms may even seem appealing. Personally, I don't have a taste for wine.

Wine is a matter of taste. I've always thought that it depends on what you really like. As for taste, if you stick with "middle of the road pricing" you'll probably find a really good wine that's not too expensive.
If you're looking for something in between that could go with both, I really like a good Shiraz.

I like a nice Merlot with beef, Cabernet Sauvignon with other meats (like pork), Chardonay with fish and Pinot Grigio with poultry... but thats just me.
