all i have to go on, is what is stamped on the egg which is 3uk9 130. no best before or use by date, which i thought was compulsary. tried to find out on the web, but no luck, Hope there is an eggceptionally knowledgeable person out there who can advise me

thanks you guys you helped to confirm i was getting unfresh eggs, have changed supplier. also when i recited all that i now know about eggs to my old supplier and that i asked yahoo, she looked taken aback. this is a brilliant being able to get instant and intelligent answers, thanks yahoo

If you are worried about whether or not the egg is fresh, put in in water deep enough to cover it plus a few inches. If it floats at all, don't use it. If it lays still on the bottom, it's good.

I have a catering business and I was always lead to believe that any eggs used should have the lion mark which tells us that the eggs are salmonella free,and these will have a best before date as well..

when u crack the egg the white around the yolk should be prominent above the rest of the white, also the water suggestion above is a good indicator but u should but a little bit of salt in the water,
