The police don't do this. The medical examiner does. The dead person's family has to supply the most current x-rays of the dead person. The upper and lower jaws are removed from the dead person, and a forensic dentist comes in and examines the teeth noting what restorations are there. His examination results are compared then with the x-rays of the dead person. If they match, then they have made positive identification.

there is no database by the way. someone jsut comes to my office and asks for the deceased dental record and then they just match up fillings and crowns. usually the medical examiner does it but sometimes a forensic dentist is used.

They find out from the next of kin where the dead person went for dental treatment.

Then with those records they look into the dead persons mouth, looking for crowns, fillings, extractions, bridges etc etc.

There's a database of records just like fingerprints. They take x-rays of the person who needs to be identified and find the match by entering the info into the database.

They look for different types of teeth, crowns, etc. Also, if they want to identify a person, they can get DNA from the insides of the teeth, and do tests on it that way. (I love watching the First 48 on A&E...goes into that a lot)
