there is a "use by" date on the can or if they're already opened and you can't remember when you opened them, it's time for a new can.

Fresh fish doesn't smell like fish. Basically if it's fresh it should have very little odour. The fishier the smell, the older they are. Check the eyes. Fresh fish have bright eyes, not opaque. Another way is to check the gills.Nice and red is best.

fresh sardines believe it or not come from the sea once dead they all tend to kinda go off.

The eyes should be prominent and clear. Smell is a good indicator too.
If the eyes are cloudy and sunken, throw them out.
I'm assuming you mean the fresh variety?

A chef would smell it first, if it passes that test then have a little taste. It won't kill you, try that!!
