Homemade Carrot Cake w/ homemade frosting. I make it for my husband every year for his B-Day he absolutely loves it!
Mix together:
2 cups of flour
2 teaspoons baking soda
2 teaspoons baking powder 1 teaspoon salt
2 teaspoons cinnamon
dash of nutmeg
dash of allspice
dash of ginger
1 3/4 cup sugar (plain white reg sugar)
1 cup vegetable oil
4 eggs
2 cups grated carrots ( I find sticking them in a blender is quickest just dont put a whole lot in at once)
Pour batter into 2 layer cake pans or 1 large one. Bake at 350 for aprx. 30 mins. Cake is done when top is golden brown and u insert a toothpick and no batter clings, crumbs are OK.
Now what makes it truly delicous is the frosting....
1 Cup butter (2 Sticks)
2 pkgs cream cheese
1 pound confectioner's sugar (powdered sugar)
1 Tablespoon Vanilla
Mix together soft ingredients first (it helps to mic the cream cheese first), then slowly add powdered sugar
Cool off cake in fridge when its done cooking for about 10-15 mins than top it off with the frosting.
It will be the tastiest carrot cake you've ever had, GUARANTEED!!!

Better Than Sex Cake
Ingredients:
1 C. flour
1 C. chopped nuts (use pecans)
1 stick (1/4 lb) butter, softened
1 (8oz) pkg. cream cheese, softened
1 C. confectioner's sugar
2 cartons (8 oz each) whipped dessert topping, divided
3 C. milk
2 (3 1/2 oz.) pkg. Instant chocolate pudding mix
Preparation:
In medium bowl, combine flour, nuts and butter; mix thoroughly and press into the bottom of a greased 9x13-inch baking dish. Bake at 350 degrees 20 minutes. Cool on wire rack. In medium bowl, with electric mixer; combine cream cheese, confectioner's sugar and one carton of the dessert topping. Beat until well combined and spread over cooled cake layer in dish.
Refrigerate. In large bowl with electric mixer, combine milk and chocolate pudding mixer; beat three minutes at low speed until thickened and glossy. Spread evenly over cream cheese layer in dish. Refrigerate until pudding is set. Spread remaining carton of dessert topping (like Cool Whip) evenly over chocolate layer and refrigerate until
serving time. You can decorate the top with chocolate shavings or chopped nuts.
You can substitute lemon pudding… if there is a chocolate allergy…or just because.

Chocolate! Chocolate! Chocolate! Bundt Cake with Chocolate Glaze Recipe
Need I say more...CHOCOLATE! Decadently rich and moist. Add a scoop of vanilla ice cream and you're in Heaven.
Cake
1 (18 1/4 ounce) package devil's food cake mix
1 (4 ounce) package instant chocolate pudding mix
2 cups semi-sweet chocolate chips
1 3/4 cups water
2 eggs, beaten
1 teaspoon vanilla extract
Chocolate Glaze
3 tablespoons cocoa
2 tablespoons butter, melted
1 (1 cup) cup 10X powdered sugar
2-3 tablespoons hot water
Cake: Preheat oven to 350°.
Grease and flour bundt pan, set aside.
In large mixing bowl, combine cake mix, pudding mix and chocolate chips.
In another bowl, combine water, eggs, and vanilla mixing well.
Add egg mixture to dry mixture and mix with spoon until just blended.
Pour into prepared pan.
Bake for 50 to 55 minutes or until cake tests done when wooden pick in center comes out clean.
Cool 15 to 20 minutes before removing cake from pan.
When completely cool, drizzle cake with Chocolate Glaze.
Chocolate Glaze: Combine all ingredients in bowl.
Mix with spoon until smooth

Fav dessert for me would have to be Trifle
ingrediants>
1 packet of port wine jelly crystals
1 and 1/2 cups of boiling water
4 tablespoons custard powder
375ml of milk
1/2 cup sugar
1 teaspoon vanilla essence
1 cup of whipped cream
12 macaroons
1 maderia cake
1/2 cup of sherry
1 punnet of strawberries
and 1 punnet of blueberries
Method>
1.Dissolve jelly crystals in boiling water. and refrigerate until partially set
2.Blend custard powder with milk,,add sugar and vanilla essence,,cook for 3-5 mins on high,,stirring twice during cooking,,then allow to cool
3.Fold half the whipped cream into custard.
4.Arrange macaroons and cake in the base of 4 individual serving dishes,,pour half of the sherry over macaroons and cake,,top with a layer of strawberries,blueberries,jelly and custard.
5.Repeat layers and then refrigerate for 2-3 hours,, when ready to serve decorate the top with remaining whipped cream and more strawberries and blueberries ..... yuuuummmmmy : )

Steam egg
(3 eggs, one & 1/4 cup of water (melted with 3 Tsp of sugar).
also add ginger extract to taste. Steam for 6 minutes.)

my all time favorite dessert would have to be blueberry cheesecake, but I also like banana spilits, cream puffs, and fresh oven baked chocolate chip cookies. I could go on and on......
