I want to send a letter from USA to Czech Republic, Croatia, and Ghana. On the envelope do I write the country in english? I'm so confused. And will the post office send my letter to these countries? Will they send my letter to all "exotic" countries?

It's fine to write the name of the country in English, since the letter is originating here. There should be no problem with sending international letters, as long as you use the correct postage!

When you address an envelope, you put the country's name in the native language of the country you're sending it from (in this case, english). This ensures that the U.S.P.S. can get it to that country, where it is there the responsibility of their postal service to send it to the proper address (which should be in the form/language of their country).

Anybody that has a mailing address can get mail from any country (but it may cost you).

The language of where you're mailing from. It's that postal system that needs to figure out what country to send it to.
If you're really unsure still, put it in both languages.
