Martial arts, and power lifting.. Martial arts because obviously for one it will teach you how to fight but it will also give you flexabillity, calmer frame of mind during the fight and will get you used to fighting motions plus the sparring sessions will be much more appropriate than in boxing, just remember almost all of those fights wind up on the ground so when you have a guy coming into bullrush you please, im begging you, god couldnt give you a more open target, so please just side step and put a knee to the face.. Power lifting will make you much stronger but while your taking the martial arts you wont lose any mass from the someimes extensive conditioning programs(depending on what school you go to) I would recommend Akito, or learn Bruce Lee's "Jeet Kun Do" style, look it up. Seriously though, Find someone who does it and find out where they train. There are many UFC fighters that have their own gym/dojo. See if anyone is in your area. If you are willing to move, Guy Metzger has a dojo in the Dallas, TX area.

you should be able to find a cage fighting school that will teach you.
otherwise i would learn a good standing martial arts eg tae kwon do or muay thai kick boxing. they will teach you the basic strikes, punches, kicks and blocks. you also need to learn a good ground fighting style eg jujitsu.
do a lot of power lifting and strength gaining exercises, however to much of this may increase your weight to a higher category.
you also need to do a lot of cardio work. most cage fights, especially heavier weights come down to whose fitter not whose stronger
