Well....I'm not sure how you could get a pecan pie to do this since the top of it is pecans and not crust....? There might be a variation with a crust on top, but I've never seen it before. Here is our family favorite for Pecan Pie -- maybe you won't care that it doesn't puff up in the center! ;)

Pecan Pie
Serving Size : 10

1 10 inch unbaked pie shell
5 whole eggs, beaten
1 cup sugar
1 2/3 cups Karo lite corn syrup
1 teaspoon vanilla
1/4 teaspoon salt
2 Tablespoons butter, melted
1 1/3 cups whole pecans

Chill pie shell after making [or use a store bought one]

Mix together all the remaining ingredients, except the nuts. Beat well. Stir in nuts. Pour into chilled shell.

Bake in preheated oven 350 F, on middle shelf. Pie is done when center just begins to puff, but is not yet set. It will set during cooling.

If your oven is hotter than normal, bake at 325 F and use center puffing as a test for doneness. This will take between 45 minutes and 1 hour.

Cool, and to keep this must be refrigerated. It is a 'custard' type pie, just like pumpkin.

NOTES : This is an extremely easy pie to put together. The key is in the baking. Too fast and hot a baking can curdle the filling. Too slow and cool, will keep center runny and it doesn't set. Experiment with different oven shelves and heats. Perfect pecan pie is creamy thruout and just set. It can be lovely.
