I want to fry some shrimp tonight but I don't want to over cook them. The last time they were to tough. Does anyone know what would be good to batter them in?

cook shrimp for only 3 minutes. A good batter is a Louisiana fish fry very good

Flour, pepper, salt. Dip in beer first, then egg wash, then in flour mix. Refrigerate for one hour. Fry. Length depends on what size shrimp you are using but average grocery store size takes about 3-4 minutes with grease at 350 degrees F.

agree with the tempura. you can make your own or buy it in the box.

once you do that then roll in Panko brand bread crumbs

fry at 375 in PEANUT OIL!!!

peanut oil has a very high smoke point and has a great flavor. using vegetable oil may allow the oil to break down and smoke, then you have ruined all that oil and your shrimp.

use a deep fry thermometer to make sure you are frying at the right temperature.

Depends on if you buy the already cooked kind, or Tiger Shrimp or whatever. Shrimp turn PINK when they are DONE, so..there.
If you cook them longer, they get rubbery. If you buy the shrimp that are already cooked, all you have to do is heat them up.

If you are using a deep fryer, you fry shrimp the same way with any food...until it floats. When the food floats to the top it is done!

cook shrimps no higher than 5 mins....plus a good batter is egg and cornstarch.....plus seasonings of course

Did you consider boiling them? You'll know when they are ready and you didn't douse them with fatty grease.

a great batter would be made from packaged tempura flour and iced water. The iced water makes the batter light and crunchy when fried
