TIME SAVING TIP:
You've got some excellent receipes already submitted. If you're not in a chopping, cutting, dicing type of mood, there is a shortcut. Use a bag of mixed frozen veggies with your meat and stock. They do very well. You can also buy the small pasta stars to add the last 7-10 minutes for fun! :)

Here is what I do.
Take a whole chicken, cover it with water and bring it to a boil. Add in your favorite seasonings, garlic, celery, salt and pepper, poulty seasonings, etc. Lower the heat and simmer till the meat falls off the bone.
Remove the chicken and save the water. Debone and shred the chicken, putting some of it back in the water. Use the rest to make chicken salad.
Cut up some carrots, more celery and add more seasonings to taste to the reserved water. Add in some noodles and boil till done.
Voila, chicken soup.

This is my mom's recipe:
1. Chicken parts (thigh, breast, etc. with bones attach) into a pot full of water with onions (1 or 2 sliced in half), carrots (a few cut in quarters), and whatever other vegetables you want to season the broth. Plenty of salt and pepper! Every once in a while scrape the scum off of the top of the broth.
2. Once broth has come to a boil, allow to simmer for a long time (I'd say a few hours!)
3. Strain completely. Boil some noodles/rice seperately. Add cooked noodles to hot broth. Salt and pepper to taste.
4. For a healthy twist, add a handful of spinach to the bowl and stir directly before serving.
*To add incredible flavour, bake or fry the chicken pieces before adding to water. Adds great fried chicken taste to soup.
The quick (non-mother) way:
1. Open a package of Lipton. Throw into water. Bring to boil. Allow to simmer. Eat.
PS. The second way can't compete on taste.

You get in the car or bus or taxi, your choice. You drive/ride to the nearest supermarket. You goto the canned soup aisle. You get Cambells Chicken Noodle Soup. You go home. You open the can. You put the soup in the bowl. You put the bowl in the microwave. You microwave it for like 2 minutes and take it out. You get a spoon and you enjoy. And that is how I make Chicken Soup. If it pops, stay away. I burnt my chin when the chicken popped.

Chicken Soup
* 2 tablespoons vegetable oil
* 2 skinless chicken leg quarters
* 1/2 cup chopped onion
* 2 quarts water
* 3 cubes chicken bouillon, crumbled
* 1 stalk celery, chopped
* 3 carrots, chopped
* 1 clove roasted garlic, minced
* salt and pepper to taste
* 1 (12 ounce) package thin egg noodles
Directions:
1. In a large pot over medium heat, cook chicken pieces in oil until browned on both sides. Stir in onion and cook 2 minutes more. Pour in water and chicken bouillon and bring to a boil. Reduce heat and simmer 45 minutes.
2. Stir in celery, carrots, garlic, salt and pepper. Simmer until carrots are just tender. Remove chicken pieces and pull the meat from the bone. Stir the noodles into the pot and cook until tender, 10 minutes. Return chicken meat to pot just before serving.

Chicken soup is very simple.....anything goes..I really do not "use a recipe" I have put one below for you. Good luck:)
Original recipe yield: 12 servings.
Prep Time:20 MinutesCook Time:1 Hour Ready In:1 Hour 20 MinutesServings:12 (change)
--------------------------------------------------------------------------------
INGREDIENTS:
3 tablespoons vegetable oil
2 onions, diced
6 stalks celery, diced
6 carrot, diced
3/4 tablespoon chopped fresh rosemary
3/4 tablespoon chopped fresh tarragon
3/4 tablespoon chopped fresh thyme
3/4 tablespoon chopped Italian flat leaf parsley
4 quarts low-fat, low sodium chicken broth
3 1/2 cups cubed skinless, boneless chicken breast meat
1 (16 ounce) package egg noodles
salt and pepper to taste
--------------------------------------------------------------------------------
DIRECTIONS:
In a large skillet over medium heat, cook onions in oil until translucent. Stir in celery, carrot, rosemary, tarragon, thyme and parsley and cook, covered, until vegetables are soft, 5 to 10 minutes.
Transfer vegetable mixture to a large pot and pour in chicken broth. Simmer over low heat, covered, for 30 minutes.
Stir in chicken breast pieces and egg noodles and simmer, covered, 30 minutes more. Season with salt and pepper.
