Go to the grocery store and pick up a ready-made Spring Mix salad.

Then go grab a back of dried cranberries (sometimes called Craisins). Find some toasted walnuts. Buy some crumbled Feta Cheese. Get some cherry tomatoes if you like them. Also, find a Garlic & Herb dressing mix.

Mix the ingredients and enjoy. It makes a great salad. The Garlic & Herb dressing is just wonderful!!

Wash, in cold water, the ingredients you want in your salad. Cut or tear the leafy items to a bite-size. Cut the other items to bite-size.

Mix 4 Tbspn Extra-Virgin Olive oil ( or some other type oil according to your taste) with 1 Tbspn red wine vinegar. Sprinkle salt and pepper. Pour over Salad ingredients and toss to cover all ingredients.

Allow to rest about five minutes in refrigerator.

Serve in deep dishes.

Make sure you include peppers. They really bring out the taste of the lettuce, tomatoes, cucumber, spring onoins, celery etc... Cut it all up small, not big chunky stuff. Boil some rice and mix in sweetcorn and peas. Boiled new potatoes with mint. Homemade coleslaw,( grate some carrot finely chop some onion and finely slice some white cabbage. Mix together and add mayonaise.) Hard boiled eggs chopped up with mayonaise and add cress. Sounding tasty yet? Experiment. It's easy!

DON'T go to the supermarkets, their vegies and packed salads are nothing compared to vegetables you can buy from a farm. The best ingredients make the best salads, try buying local produce. Try sliced fennel and radishes with a home made vinigarette.
