Is there a chemical difference? Does it affect the body differently?

Sure is a chemical difference. The browning indicates that a portion of the carbo-hydrates have been denatured---and in the case of dark toast, actual reversion to elemental carbon. And to be sure, the moisture content has been reduced.

I am guessing the colories in toast versus bread are essentially the same----like the variation in calories from one slice to another exceeds the coloric change from toast to bread....but that is merely a guess on my part.

I judge the nutritional value of toast and bread is essentially the same---i.e. I doubt there could be any differences mearued in a body that ate toast versus the same number of slices of bread.

Someone told me that charcoal (ie burning the toast) causes cancer, but I think thats an urban myth. I can't imagine it would affect the body differently, its already cooked afterall.
