Water has an empiric formula of H2O, a highly polar substance that's why it dissolves most, if not all, polar substances. At the same time contains Hydrogen and Oxygen, 2 very important molecules in the human body, that's why this is the only essential liquid we need. H2O also has the ability to form "hydrogen bonds" with other non-polar groups, so in short, it dissolves most substances on earth; hence, called the "universal solvent".
