The hands down coolest was watching Mars grow from August 2005 until November 2005. The most fantastic night was one where I saw the Martian moon Deimos without even trying for it. This was in a 7" APO refractor with a binoviewer for two eye viewing.
Another cool time was using the 7" APO refractor with an Oxygen-III filter, again using both eyes with a binoviewer and two wide-angle eyepieces, I followed along the knots and walls of gas in the Orion Nebula (m42). The illuminated gas clouds really looked like a 3D shell of gas.

Through a telescope, Venus and Mars. Through my eyes, a weird white ball that dissapeared without a trace.

Saturn and the Moon. Sounds boring compared to galaxies and such, but trust me, the Moon and Saturn look way more impressive than any galaxy or other "deep sky" object when you actually look through a telescope with your own eye.
