Sure. Drive to Cocoa Beach on the Atlantic side or head south along the Gulf Coast to Sarasota, where you will find Siesta Key Beach. Both beaches are fun and relaxing. Don't throw the idea of a theme park out the window! I used to work for Disney and there were somedays where none of my friends were available to hang out. So I would just go to the parks by myself! You can have a lot of fun and your wait time in lines can be shorter if you tell a cast member that you are a single rider. Sometimes, popular rides have a single rider line and those people hop right on.
EPCOT is a great park to go it alone. There are so many historical and visual things to see and do there that a group can often pull you away from some of the most interesting things there. Too often, guests are more concerned with getting on every ride, that they don't take a few extra minutes to walk into the country's and check out museums and shops. Or just grab a good bite to wat and people watch!

There's some pretty good shopping, especially if you're into designer stuff. The Mall at Millenia has Jimmy Choo, Louis Vuitton, Saks Fifth Avenue, and lots of other boutiques. The Premium Factory Outlets have outlets from most major designers- Ralph Lauren, Calvin Klein, Fendi, Burberry, &c.
There's also the Florida Mall, which is HUGE!
The Florida history museum downtown is very well done. The Henry Leu Botanical Gardens are beautiful. There are a couple art museums, as well as a science museum, too.
If you don't mind driving an hour (or so- depending on traffic) to the Tampa/St. Petersburg area there's a Salvador Dali museum.

Melbourne Beach or Sebastian Inlet if you feel like driving for a an hour or so. If you go to Melbourne stop in the historic district downtown, right off 192 and US 1. As far as Orlando goes check out the night life at the theme parks, Downtown Disney, Universal City walk and Pleasure Island.
I have never been out there without my kids but I hope that helps a little.

Discovery Cove...only allowed in by reservation. Look it up online, make reservations and go. Its a totally awesome experience!!!

As a kid, I used to go fishing with my grandfather in a local river (Indian River, maybe?) The fishing was good there.
