because it breaks down the gum base...the gum is basically a stain of sorts and the way you remove a stain from anything is to an over-abundance of the substance that forms the base of the stain, i.e. you basically "thin the stain out" to nothing.

Polish remover is a solvent(contains acetone) . Solvents are good for this.

yeah...it has acetone so it removes gum off! what a blessing :))
