You probably already know that to build muscle you actually break the existing muscle down first. And overtraining is the result of not letting your muscles heal. However, they don't need to heal completely. You would never know if they totally healed, except to wait and wait, and then you lose the muscle you just built.
I think the key is not to over-exhaust yourself, so you don't have any energy. If you get to that point, your body is probably struggling in the healing process, and you might want to break for 3 or 4 days.

I'm sure you know that you are to work certain muscle groups every other day to give them proper time to rest and heal and grow in between workouts. If you are doing this but still feeling sore, etc you might have to take an extra day off. If you run or do some sort of road work every day, it makes sense to change things up (distance/pace) every few days and definitely take a day off.

Healed means there's NO pain and FULL flexibility of the large muscle groups and connective tissue (tendons).
