The answer isn't magic, I'm sorry to say.
Basically, you take mozzarella cheese cut into 4' by 1/2' strips and you roll it in some egg (that you've cracked into a bowl and whisked a little). You make a mixture of bread crumbs and Parmesan cheese, and roll the eggy cheese sticks in it until its coated. Then, you can either deep or pan fry until golden, brown, and darn tasty.

This is how they get the cheese in the sticks, if you really want to know:

Ingredients:
1 pound Mozzarella Cheese -- Cut In Sticks
3 Eggs -- Well Beaten
1/2 cup Flour
3/4 cup Italian season bread crumbs
Vegetable oil
Italian tomato sauce

Directions:

Dip the cheese sticks in egg, roll in flour, and dip in egg again. Then dip into bread crumbs.

Place on waxed paper and chill 1 hour. In a large saucepan or dutch oven, heat oil to 375F.

Fry chilled cheese sticks in hot oil; drain on paper towels. Serve with heated pasta/spaghetti sauce on the side.

I work at a pizza place so I should know and I make em and slice them and serve them so what they do is take dough, and oil and put seasonings on it put 5 ounces of cheese on it layer it with liquid butter and put more paprika I think on it and send it through the oven and you cut them 7x2 so they look about the right size to eat and wallah there's you're cheesy bread they smell real good taking em out of the pan with all that grease mmm tasty by the way the motzerella is already in the mix of the dough I believe either way I dont care as long as I get my paycheck lol
