Depends on what kind of singer you are. If you want something to stretch your technical abilities, try some opera or show tunes. Or if you just want something to sing along with in your car, turn on your local top 40 radio station.
On a more specific note, I'd say learn Bohemian Rhapsody by Queen only so you'd be prepared if ever you fall into that scene from Wayne's World. And it rocks.

From personal experince, I find that The Who's Tommy, Rent and Les Miserables to be great music to sing to.

Depends on the mood. For partying, then any Beastie Boys hits. For romantic moods, Coldplay is always a sure shot.
