Welfare of poultry?? I'm sorry, but are we actually talking about rights for chickens? There is so much human suffering - and much of it is dietary. If we can be more efficient and effective in producing protein to feed people, then we alleviate human suffering and make life better for intelligent life. Honestly; chickens don't care.
I know this isn't helping you research your topic very well. Sorry. So let me list some stakeholders. Certainly the big chicken providers, both wholesale and retail. Frank Purdue, Kentucky Fried Chicken. Cost is a deciding factor in many consumers' decisions on where to buy their chicken, so Purdue and KFC will definitely be hurt or helped if for some reason they're required to respect chickens' rights. And so, therefore, will the end consumers. No big deal to some family on the high end of town, but some underprivileged schmo is going to be in the supermarket some day deciding what they can afford, and if the chicken costs too much because the chickens' rights crowd has prevailed, somebody might be going hungry tonight.
Don't forget stockholders. My retirement account is in a 401K that holds a broad cross-section of industries. If costs go up for the chicken-farming segment of American industry (because of the chickens' rights movement), then stockholders of every company involved will be affected - producers, middlemen, retailers, shipping companies, restaurants. It'll be a small effect further down the chain, but there WILL be trickle-down, and small effects multiplied by thousands of end users will have a measurable effect on the economy, on the market, and therefore on the savings of millions of Americans.
Who else? Don't forget the folks who supply chicken farm technology. I'm research-limited tonight and can't give you specifics (sorry), but a quick Google search should provide you some answers on who are the manufacturers and middlemen who provide mass-production technology to the big chicken farms.
Should we call animal rights groups "stakeholders?" I'll leave that up to you. And THEY will tell you that all humanity is a stakeholder, since it degrades us as humans to mistreat animals. I personally think that's bunk - serious hogwash - but that perspective might impress some teacher/professor so you might want to mention it.
Good luck, and here's hoping you approach this with a good dose of common sense.

It hasn't hurt the poultry at all. Technology will protect poultry in the upcoming bird flu pandemic. Having poultry run "free range" is the worst thing you can do right now.
