It is probably is legal to ride in the back of a pickup truck in Arizona as long as the laws haven't changed since the publication of the book I looked at. According to the AAA Digest of Motor laws it says: Pickup truck passengers: Although dangerous, riding in the back of an unenclosed pickup truck is permitted. Found on pg. 19 of the 65th edition.

Check your state laws. In most places it's illegal for people under a certain age or while on certain roadways.
