The Mexicans did, in fact, destroy the Alamo because they didn't want it to be used as a fortress again. The Alamo you saw on your recent visit to San Antonio is only a small fraction of the original structure that existed at the time of the battle. It was the church, whose main entrance faced the courtyard.

We all know from the movie "Pee Wee's Big Adventure" that there's 'No Basement At The Alamo.'
During the battle, all outhouses were destroyed. After the fight, the Mexicans were victorious but exhausted. They didn't wish to dig new outhouses, and there wasn't a basement to utilize for you-know-what. The next best place to do their business were the four corners of the Alamo proper.
In this way, Mexican soldiers could maintain their privacy and not offend the few Texan women and children still left alive after the battle.
Their urge to relieve themselves came as a direct result of the Mexican Army diet. They ate mostly beans, beans and more beans. Eventually, the invading Mexican Army became known as 'beaners' by the indigenous Texan population, a term that persists to this day.
Today, travellers universally avoid drinking the water in Mexico. The water there is bad for a reason, and it may have something to do with beans.

The Mexican Army used the Alamo as a fort in prior years to the battle, and had left many of the cannon the Texans used, as they had intended to return at some point and occupy it again. Remember also it was a mission and the building most still associate with it was a church.
The portion called the barracks partially remains today, part of it was torn down to make room for other buildings in the early 20th century.
The portions of the chapel crumbled but was repaired and a roof was added sometime later, it originally had no roof.

Mexicans are pretty superstitious. If Docia Schulz told you they saw ghosts, and she's the expert on ghosts in San Antonio, then you should read one of her books to find out more. Did you go to the Alamo and do you know about the line they find every morning drawn in the floor? This is the coolest town and filled with afterlife as well as now life.

It might because they slaughter all the men, but left the women, children, and slaves alive. Had other battles to fight than just the alamo.

Because it was originally built as a Mission a place to worship and it would be sacrilegious to tear it down.
