Yes, it will still "dry" or cure.
Personally I dont like quickrete because it has too much sand in it for me. I always add some portland cement mix to it, if I am doing a large job.
But if I am doing fence posts or stuff like that, it wont make any difference, as it will be in the ground and out of the way.
I wish you well..

Yes. It may be more likely to crack however in the long run.
There are other cements out there for a rockless look, including some high pressure ones.
Also the rocks sink when the cement is finished, so why don't you want them?

it will cease to be quikcrete without the aggragate. and hence will be weak.
You should try fixall concrete patch and masonry ashesive.(adhesive looks like white glue).
Clean out all dirt and debris.
prime with adhesive.
mix amounts of fixall as needed.
put into cracks as required.

If you dont want the aggregate either get motor mix or grout. Like some other folks said.. the rocks are there for a reason.. strength!

Why not just buy the quickcrete without the aggregate? Anyway, besides that, no, from what I know, removing the stones shouldn't make a difference in set time... just in time consumption. Good luck.
