I'd second the Arles recommendation - the arena is really something. Aix-en-Provence is special, and you can walk everywhere there. Marseilles is nice down around the old port, and the trip up to Notre Dame de la Garde (the basilica high up on the hill) is wonderful.
There's a great walk along the calanques (beautiful white cliffs along the Mediterranean) running west from St. Cyr sur Mer. If you're up to it, climbing Mt. St. Victoire is wonderful. A little excursion out to the Pont du Gard near Nimes would be memorable as well. So would a trip to Avignon.

It depends on your interests--art? music? nature? history?
When we were there a few months ago, we spent time at Arles and saw the asylum where Van Gogh stayed for a year or two, a Roman arena built around the time of Christ, some other Roman ruins; Aix-en-Provence, which was nice for food and for walking around--hard to drive in though; with brief stops in Avignon and other cities along the Rhone. We didn't visit Marseilles, though--I understand it has improved in recent years, but is still somewhat nitty-gritty.
If you have a car, you might also check out the Verdon Gorge, which is spectacular. It will be a full day's trip from eg. Aix-en-Provence.

if you are in Nice go to a club called "The hole in the wall", there is also lots of olive oil shops around Nice. Just sit back and look at all the lavender fields. Drink lots of good wine, fresh made sausages and cheese.
