I'd like to keep my options open to obtain a doctorate in the future, but the MFA is considered a "terminal" degree. How does the MFA stand up? Will I have to get a doctorate in order to make a MLA worth it?

Quite a few folks proceed to the Ph.D. from the MFA, though it is generally recognized as terminal. I would accordingly recommend proceeding with the MFA, as it will offer you greater flexibility--as a better-known quantity, academic communities and employers have a better sense of what the degree represents, and they won't hold it against you if you want to go for the doctorate.

There's no degree that will stop you from getting degrees... just keep on going MFA, MBA, PhD, Md, DPhil, RIP.
