Could it be the thermostat? I truly have no idea and don't want to spend alot of unnecessary money to have it fixed if it is nothing major. Or if it is something I could fix on my own.

Check filters and clean them. Make sure condensor (outside) is clear of debris and clean if necessary. Cycle cooling "on". and listen for the compressor start-up(outside in the condensing unit). If compressor doesn't start, coulb be a blown control fuse or relay(cheap stuff). As with any electircal device, If you're new to such equipment and get curious, PLEASE SHUT OFF POWER before tampering :-)=

What do you mean "stops working".If the fans aren't running then check the breakers and thermostat. If motors are running and not cooling check filters(make sure you have good air flow at evaporator and condenser(outside unit).Put your hand in condenser air flow(should be noticably hotter if not then you have freeon or compressor problem).

if you had dirty filter it would still run just not well
thermostats don't have any moving parts probably not the problem either
check If you have power going to the unit
see if fan is coming on
see if compressor is turning on

call out a HVAC mechanic

Most of the AC problems i had were with the AC freezing over, you have to turn it off, check the main air vent and see if it has iced over. If so, let it melt, pick it up with a towel and keep using.
