As long as you're an *Unconditional* Permanent Resident, you can come and go as you please to foreign countries. If you're still a Conditional Permanent Resident, then you need to apply for "parole" to leave the country. That condition is pretty early in the application process, so unless you've just applied for Permanent Resident status, you're OK. Check your "green card" to make sure it says "Unconditional."

That might be enough but check the US immigration website

to see if you need additional permission to travel outside the US as a permanent resident. I know in some cases they require you to have a travel document. The application for that is accessible in their list of downloadable forms.

I would bring all of them. Next year you're going to need a passport to re-enter the states from Mexico, so it might be a good idea to get one now.

I don't know about the docs, but make sure you have your hepatitius shots and bottled water!! I hope you have a good time and get info about the docs. Sorry I couldn't help much!!
