You add $2 to the total the three people paid for the meal. You should be subtracting $2
27 - 2 = 25
which is what they paid for the meal.

There is no "$1 left" -- the error in calculation is that you have disregarded the SIGN on the values. Let's look at the "accounts" of the people involved. at the start each of the three peope have (-10). The waitress returned 3 so each gets (+1) to their account. So their account is (-9). The waitress stole +2, so the numbers are (-9) + (-9) + (-9) + (2) = (-25) which is the proper cost of the meal. You don't add the 27 and 2; they have different signs: it is (-27) + 2 (or from the waitress' viewpoint, (+27) - 2). This is an old chestnut, and causes grief for people often, when they fail to keep signs straight in transactions.
It is easy to see that things are askew if you make a few changes: Let's say the meal is $10 each, but that the waitress is supposed to return $7: she pockets $1 and returns 6, which is $2 for each customer. So the corresponding question is: $24 (3 men have paid 8$ each) + 1 stolen = $25 Now it's FIVE dollars supposedly vanished! When you ignore the signs and make incorrect conclusions, you can make it appear that ANY amount has "disappeared", but it's all bogus!

The meal was worth 25 $ since 5$ was the change

The men got 3 $ and the waitress kept 2$

So, 25+3+2 = 30

They paid $30 she owed them $5 but only gave them $3. $30 minus the $5 she owed them is $25 plus the $3 she gave them would be $28 plus the $2 she stole would be the original $30 they paid.

theres a little problem with your riddle... if there was five dollars in change total and she gave them back three dollars and kept two that would mean that each person paid $29. unless you mean that there was five dollars in change for each person which would mean that each person has paid $28 but the waitress has now stolen two dollars from each person or six dollars in total. either way you look at it. you said something wrong in there and thats why the one dollar is a mystery
