What all would you need to put in an online poetry portfolio, and in what order would it be best to put the poetry in? Oldest to newest, newest to oldest, or something else?

I agree with the sort options above. You should put whatever poetry you like in this portfolio. If you have any images that you feel go really well with the poetry, include those as well. If you want to sell any of this or even your writing skills, include contact information somewhere on the page.

Online portfolio?
Start with newest to oldest.... but if it's online, you can let the viewer decide. Give buttons the user can click on that will organize them by date, title, genre... whatever. In ascending and decending order, much like sorting messages in a mail client.
