I have read the previous answers and was displeased...here is my comprehensive list from my experience as a guitarist and pro musician:
Black Metal-Thomas Rune Andersen from Dimmu Borgir
Death Metal- Jesper Strömblad from In Flames
Doom Metal- Dylan Carlson from Earth
Folk Metal- Aydan from Elvenking
Glam Metal- Steve Vai (Early days) when he was with David L. Roth
Goth Metal- Marco "Maus" Biazzi from Lacuna Coil
Grindcore- Mitch Harris from Napalm Death
Industrial- Richard Zven Kruspe from Rammstein
Post-hardcore- Munaf Rayani from Explosions in the Sky
Metalcore- Joel Stroetzel from Killswitch Engage
Neo-Classical Metal- obviously Yngwie Malmsteen
Nu-Metal- probably Munky from Korn because Limp Bizkit was horrible!
Power Metal- André Olbrich from Blind Guardian
Prog Metal- John Petrucci from Dream Theater
Symphonic Metal- Timo Tolkki from Stratovarius
Thrash Metal- Kirk Hammett from Metallica
Speed Metal- Glenn Tipton from Judas Priest

and note!!! metal is not the same as Hard Rock where guitarists like Eddie Van Halen, Slash, and Tom Morello reign solid!

Cheers!

Only one stands alone as the best: Eddie Van Halen.

Any challengers brave enough to step up to the plate and try to outdo Eddie are more than welcome.
