No. Their forelimbs are not particularly dextrous. Anyway, that doesn't even happen in the movie; it's Mick Dundee getting back at the hunters by using a dead 'roo as a puppet.

the kangaroo didn't shoot the rifle in that movie

the roo had been shot by the drunk and dundee propped it up, wedged the gun unter its paw and shot the rifle himself to freak out the drunk

Yes, dogs and snakes have all shot hunters; a kangaroo has long "fingers" and claws and would be able to do it under the wrong circumstances.
