Sewing - home decor stuff like curtains are easy, fun, and give a huge feeling of accomplishment. Slipcovers, shelf covers, seasonal decorations, even designing and making your own clothing if your ambitious. Costumes (for kids in the neighborhood, etc.) are also pretty easy and have a very fun outcome.
It's relaxing and is a hobby that you can work on for a while then leave for a while, no hurrying before the mortar sets.
In my art gallery I occasionally have fabric artists - quilters who design abstract pieces, wall hangings with tons of texture....

Volunteer at a local animal shelter. Playing with dogs is a fun hobby!

Why not start playing a sport? Thats a hobby and it'll keep your body in a good shape and its great excercise and its fun!

Take up painting!

It can complement your photography by painting things that you have photographed. I find painting brings out different aspects of a scene that are not captured as well in a photo.

Me too. I've been looking at the books for Mosaics. That looks like fun. I've also thought that stained glass might be fun.

Musical instruments (although I know for some people this is really difficult) or belly dance. Odd as belly dance sounds, I do it (for my husband ONLY!) and it's fun, easy, and makes you feel really good about yourself.
