Because at night, people are more relaxed. Babies (of *all* mammalian species) are born most easily when the mother is relaxed.

Most babies are born at night, and I think if you do some research you could find information to back that up, but why? Here is the best guess...no one knows for sure of course. And here is the disclaimer...these are births which have started on their own, not been augmented in any way and have not ended in a surgical procedure ie C-Section.
Birth is a hormonally driven event, these hormones work best when everything is quiet calm and safe. In fact it is exceptionally common for women who are in established labour to come into the hospital and have labour stop or slow down. It is not very safe to walk into a strange scary place and have strangers put a hand into your vagina. The body produces catacholamines, stress hormones, which stall labour and interfere with the endorphins which the body produces to cope with pain etc. So the theory goes it is safer and quieter to birth at night.
I do a lot of home births, and I can tell you that they are almost all at night, while hospital births with all the interference and the strangeness as well as the number and turnover of staff have births all over the place, but still predominately at night.
There is a phrase "the witching hour" which refers to the time of day most people are born and die- 4am.

these answers are crap!!!
They really aren't mostly born at night. But night time is when a mother is more calm and can feel the slightest contractions so that has them running to the hospital. Once there however the mother ends up staying for a few hours before the baby is actually born. Or they might have a doc that induces them so the baby is born sooner then it might have been born should the baby be allowed to come when ready.

Mine was born at 8 am.
I tend to agree with tweedy - mom is more relaxed.

i'm not completely sure but I always thought it had to do with the sleep/awake cycle. While pregnant, the mom and baby have opposite sleep/awake cycles. So a babe is more active at night. But this might be completely unrelated to why it seems a lot of babies are born at night.
