I'm sure speaking Chinese is in pretty high demand in government intelligence (FBI, CIA), you probably have to be a US citizen though. Also, teaching. I imagine that there could be demand for Mandarin teachers in US high schools and universities.

Go to www.guru.com. I have seen people posting up projects for people to do some translation work. Some of those projects require people to do some writings too
