It's a symbolic "washing away" of the sins and a public way of showing allegence to a church. In the Catholic church it's a sacrament (and most Christian churches follow it as a tradition). But it's mainly just for show.

in a nutshell, because jesus said we should. in a larger context it is a process that cleanses the soul to stave off damnation.
