1. when I was a restaurant manager, this is one thing I did.

I would meet the prospect and ask him/her to follow me. I would walk at a very fast pace to the back dining area, and note how quickly the person was following me. One of the qualities I was look for was high energy.

Nervous energy is not a bad thing. Look for it.

2. Present a work schedule to the prospect and ask if he / she would have any trouble working it. Stick to your guns.

3. How did the person present him/herself to you? Sloppy? Dressed for success? Alert? Yawning?

As far as hiring goes, you need to show responsibility, that you can work with a team, and good hygiene is also important. Hope that helps.
