The symbolism of the V is the feminine, although in this case, the shape probably has little meaning other than it separates Jesus from the Apostles. Notice how he is at the centre of the work and he is alone, untouched by any of them. This spacing exaggerates his divinity and is symbolic of him leaving the earthly realm. This is the type of important symbolism that people miss whilst looking for something that may not even exist.

I have heard a few diffrent veiwa on this. Some even say that the other person is actually Mary Magdoline ( sorry if I spelt it wrong)-Jesus's girl friend. Others say that I t actually forms an M for either the above named, or to symbolize marriage. Either way, This does have something to so with a woman, or the symbolization of such. Or so I have heard.
