use about 4 or 5 potatoes and about 6 eggs.
cut potatoes and onion into small pieces and slightly salt them, heat oil in frying pan and slowly fry until softly soggy, drain off fat use a big mixing bowl and stir in your beaten egg, when potatoes are well covered put in frying pan with about a tablespoon of oil. Once the underneath is done, you should use a plate or something to turn it over as the top side should still be runny, do other side and then eat !!!!!
when you get expert at this, try adding cheese and ham in the middle, put half of your fried potatoes and egg mix in frying pan when underneath is nearly done then layer four slices of ham and 4 slices of cheese, add the rest of the potatoes and egg.

Spanish Omelette Recipe
Eggs are a big part of the Spanish diet and here is a simple, traditional way to enjoy them! For a little extra flavor, serve the omelettes with green olives.
Spanish Omelette
Ingredients:
3 tblsp olive oil
3 large potatoes, peeled and thinly sliced
3 large eggs
1 onion, peeled and chopped
Salt (as desired)
Method:
Crack the eggs into a large bowl and whisk with a fork. Add desired slat.
Heat oil in a medium, light-weight frying pan.
Add the potato and fry for about 2 minutes. Add the onion in with the potato.
Continue cooking the potato/onion mixture until they start to brown around the edges.
Pour the eggs over the potatoes, gently poking the potatoes so that the eggs can seep in.
Fry over low heat, gently shaking the pan to loosen the omelette from the bottom.
As the egg begins to firm, gently flip the omelette onto the other side.
Continue shaking the pan to prevent it from sticking.
Cook for about 1 minute and then remove from the pan.
Let the omelette sit for about 5 minutes before serving.
The middle should be slightly runny.

RECIPE:
First, heat the oil in a large frying pan and then gently fry the sliced potatoes until almost soft, stirring from time to time so that they don't burn on the bottom of the pan. Add the onion and the green pepper and continue frying until all the vegetables are soft. Drain the vegetables in a colander to get rid of the excess oil.
Beat the eggs in a bowl and season with salt and pepper. Add the potatoes, etc. and mix well and check seasoning.
Heat a little oil in a frying pan on a moderate heat. Pour in the potatoes and eggs and shake the frying pan from time to time so that the omelette doesn't stick to the bottom. Once the bottom of the omelette has set, turn the heat down low and cover the pan. After about ten minutes, turn the omelette by placing either a flat plate or saucepan lid on the frying pan and quickly turning over. Gently slide the omelette back into the frying pan and continue frying, once again shaking the pan from time to time so that it doesn't stick to the bottom, until it has set all the way through.

1: Wash and cut the potatoes into thin slices. Heat the oil in the pan, and add the potatoes and salt. Fry, stirring occasionally. Tip: If you prefer the potatoes to be soft, use a spatula to mash them as they are frying. As soon as they are a golden colour, remove from the pan and put the potato mixture either in a sieve or on kitchen paper, so that as much oil as possible drains away or is absorbed.
2: Beat the eggs well with a pinch of salt, and add to the potatoes. Mix well.
3: Put two small spoonfuls of olive oil in the frying pan, so that the bottom of the pan is covered with a thin layer of oil. Once the oil is hot, add the potato and egg mixture. Tip: shake the pan gently as you move the mixture, so that none sticks to the bottom. Once the omelette seems to be cooked, use the lid of the frying pan (or a large plate) to tip the omelette out of the pan, add a little more oil and slide the omelette in again, this time putting the less cooked side first into the pan. If you need to repeat this step, so that the omelette is perfectly cooked and golden on both sides, you may do so. This omelette is delicious hot or cold.

Peel and slice potatoes thinly. Fry them in oil until done and soft(not crisp) Put them in colander for a while, so they are not oily. Beat the eggs, add salt and pepper (and fried onions, if using them), add potatoes.Mix well.
Put a pan (23 to 28 cm diameter) on the fire until very hot, with just enough oil to wet the surface of the pan. Add the mixtureand lower heat.
When half done, turn over with the help of a big plate, put it back into the pan until other side done. Serve hot or warm.

its very easy to make a Spanish omelet u just need two egg some slices of chicken breast and some onions just add the ingredients and while cooking don't forget to sing some Spanish song like la Vida loca by Ricky martin and your Spanish omelet is done
