Most places use a 6 deck shoe or automated machines that constantly shuffle 6 decks. There are also double deck games at many casinos.

it is different for every casino, every table, most shoes have 6 decks, but you should be able to find some hand dealt single and double deck bj games in every casino, but be warned, they will change up some of the rules a little bit on those games

at the eldorado specifically, the majority of tables deal 2-decks. there are also single deck and 6-deck shoes - shouldn't be to difficult to tell the difference.
