I used to think that storing them in the fridge was the way you were supposed to do it, but I read an article that said room temp is how you store coffee. It protects the flavor.

Airtight is the key. You COULD store them in the fridge or freezer, but only WHOLE beans -- DO NOT store ground coffee in the fridge or freezer -- it actually absorbs the odors in there like baking soda! Yuck!
