Use your paddle as a rudder. With a little pratice, you'll figure it out. It's really very easy.

Drag your Paddle in the water for the Direction you want to go. Right Side Steers Right etc. The person in Front will paddle as necessary, but, mainly spots your Channel to let you know which way to steer. As you enter your rapids you will see the water making a smooth V into your main channel, head for this! Most times you be OK. It coming around Bends (Curves) that hard as you may not have much time to steer. This when you Drag Hard the the person up front paddles like there no tomorrow to pull the front into the V.
BUT, it not hard. When you start just play around dragging your Paddle and Back Paddling (Back Paddling steers harder, this when you paddle backwards from the direction you moving). You will get the feel. You will have a BLAST!!!!

well luckily after trial and error you will figure it out, but there are a whole slew of techniques to use your paddle, maybe you can get a more experienced canoe-ist to give you a crash course in steering... at least you don't have to do the power stroke ( which is waht moves the canoe foward) that's ab'itch

if you want to go to the left, paddle on the right, if you want to go left paddle right, if you want to go to the left quickly, put the paddle in and push foward and vise versa for right quickly, and the back of a canoe is the bow.
