i really don't want my calves bigger, if anything i really would like to slim them, i was told you can't make your calves slimmer, and when you work your legs, you will just make them bigger, is this true?

It may make your calf muscles more toned but it probably won't make your calves bigger if you're a girl. These exercises will actually make you lose weight in the form of fat if you have any to lose. Look at some pictures of some pro cyclists and they all have nice legs.

If you train on elliptical and bikes your calves will stay hard, they will grow some. The worst thing you can do if you don't want them to grow is jog/run.
