It's totally unnecessary to peel the stringy fiber as you are cutting slices diagonally across the fibers anyways. The fibers are too short at that point to make a difference. Just rinse and make sure no dirt or leafs are on the stalks.
I like to add flour and precook the rhubarb in a pan over the stove along with the sugar, salt, vanilla extract and 1 largeTbls of balsamic vinegar then let cool to room temperature.
Add to pie baked shell with the strawberries and use a crumb topping then bake. This helps the strawberries from over cooking since they cook faster than the rhubarb.

the only thing you peel on the rhubarb is the strings like a celery, just wash really well and cut. thats all it needs, hope you enjoy your pie!!!! I love but dont make that often because no one else in the house does,

I never peel it but you can if you don't like the stringy rib part, but if you do just peel the stings off, leave most of the stalk. oh, and a pinch of fresh ginger is wonderful in it.

No no...that's where most of the flavour is. Just make sure to remove any traces of leaf.
